Lauki Thepla


Bottle Gourd or Lauki, not many of us like it. But it has many nutritional benefits. It helps in digestion and treats constipation. Those who are trying to lose weight, this vegetable can do wonders to them. It also provides cooling effect and treats sleeping disorders. Since it has high water content it also replenishes loss of water from our body.




Theplas are actually Gujarati flat bread normally prepared with wheat flour, masalas and methi (fenugreek leaves). Here, I have tried to substitute methi with lauki also called Ghiya or Dudhi as it is available round the year unlike methi which is available only during winters in Delhi.

Lauki is not quickly accepted by many,  but you can try these theplas for breakfast with curd and pickle and no one in your family will anymore dislike lauki.

So let's quickly move onto the recipe.


Lauki Thepla

Makes 8- 10 Theplas

Ingredients

1 1/2 cup Wheat flour
2 tbsp Besan (Chana dal flour)
1 cup Grated lauki
1 tsp Ghee
1 tsp Ginger chilli paste
2 tbsp Fresh finely chopped coriander
1 tsp red chilli powder
Pinch of Turmeric
1 tbsp Mixed herbs- coarsely ground(fennel seeds-  saunf, whole coriander seeds, white til, ajwain, jeera)
1/2 tsp Sugar
Salt to taste
Oil to cook

Method
  • In a large bowl take the wheat flour and besan.
  • Add grated lauki, ginger chilli paste, coriander leaves, salt, sugar and ghee. Mix well.
  • Now add all other mentioned spices and herbs. Mix well and keep it aside for 5 minutes.
  • After 5 minutes you will notice that lauki has released its water making the flour mixture wet.
  • Now knead the dough. You will not require any extra water to knead. Rest the dough for 2 minutes till all sugar crystals melt. 
  • Start heating a tawa(griddle).
  • While the tawa is heating, make small equal size round balls from dough.
  • With the help of a rolling pin, roll them flat and thin like chapatis. Since this dough can be sticky use dry wheat flour for dusting while rolling the theplas.
  • Once rolled put it on the hot tawa. Let it cook till golden spots appear on the bottom side. Now flip it to cook the other side.
  • Once the other side is half cooked apply some oil and flip it again. Repeat this till both the sides of theplas are nicely cooked with oil.
  • Serve them with curd and pickle.
