Shahi Tukda - Indian Bread Pudding

Diwali is nearing and we all are engrossed in buying gifts for family and friends, cleaning our houses and decorating them to welcome goddess laxmi and bless us. 

Diwali ka Nashta is another popular topic during these days. Ladies of the house start preparing various namkeen and sweet dishes. Sweets captivate us with enthusiasm to celebrate the festival. I am sharing with you one of my favourite sweet dish, Shahi Tukda.

It is close to my heart, as this was the first sweet dish I made after my wedding. 



Shahi tukda is also known as Double ka mitha. It is popular in Hyderabadi cuisine. It is served by soaking fried bread slices in sugar syrup and topping them with Rabri. It is easy to make and even beginners can give it a try. 


Shahi Tukda

Serves 2-3 

Ingredients 

4 bread slices
3-4 tbsp Ghee (Clarified Butter)

For Sugar Syrup
1 cup water
1/2 cup sugar

For Rabri
500ml Full Cream Milk (I used Amul Gold)
1 Tbsp Sugar
1 pod of green cardamom
6-7 strands of Kesar (Saffron)

Method
  1. For Rabri
  • In a deep pan (preferably non stick) start boiling the milk on low flame.
  • As the milk boils, cream (malai) floats on the milk. Keep accumulating it on the corners of the pan.
  • Keep stirring regularly.
  • When milk is reduced to half of the original quantity add sugar, powdered cardamom and saffron.
  • Boiling will take about 20-25 minutes and when the milk is reduced to 1/3rd of its original quantity, your rabri is ready. 
  • Keep it aside. 
      2. For Sugar Syrup
  • In a pan boil the required water and add sugar to it. You may add more sugar if you like more sweet.
  • Stir and let it boil for 4-5 minutes on low flame.
  • Remove from flame and keep aside.
      3. For Bread Slices
  • Take 4 bread slices.
  • Cut the corners.
  • Now cut the bread by either making triangular pieces of the bread slice or square pieces of the slice. I preferred them cutting into small squares.
  • In a flat pan, heat the ghee and place the bread slices. Shallow fry on low flame till crisp and golden on both sides. Keep them aside after frying.
Assembling the Dish
  • Dip all bread slices one by one into sugar syrup and place it on the serving dish.
  • Pour the Rabri onto the bread slices and garnish them with some pistachios.
You can also put some silver foil (chandi ki warak) on the dish which gives it a real Shahi look. We do not eat silver foil so I did not use it. You can serve this dish hot or at room temperature. It tastes good both ways.
