Bajra Methi Pancakes


Seasons can greatly affect our body's metabolism. During this time of the year it gets switched over to slow winter mode. Colder the weather lesser the metabolism rate in our body. Thus from childhood we are taught to eat heat giving food during winters. It keeps up the body functioning in place. 

But while maintaining the warmth in our body we gradually tend to gain weight during winters. It is because we actually consume food as though we have turned on to hibernation. So to remain in good health we must consume good food but to limited extent and exercise a lot. 



Today I shall be sharing with you one such recipe which is apt for winters and is easy breakfast food. It has all the goodness of Bajra, Methi leaves and Jaggery.

Bajra Methi Pancakes

Makes - 4 small sized pancakes

Ingredients

1 cup Bajra Atta
1 cup Finely chopped methi leaves 
1/2 cup Curd
1 tbsp Ginger Garlic Chilli paste
1+ 1/2 tbsp  Grated Jaggery
1 tsp Red Chilli Powder
1 tsp Saunf (Fennel Seeds)
1/2 tsp Ajwain (Carom Seeds)
1 tsp  White Til ( Sesame seeds)
Salt to taste
Ghee to cook (Cow ghee tastes best)

Method
  • In a large bowl take the Bajra Atta. Add to it fenugreek leaves, salt, ginger garlic chilli paste, jaggery, red chilli powder, saunf, ajwain and til. Mix well.
  • Now add Curd and make a soft dough. If required you may add more curd or water. Let this dough rest for at least 10 minutes. 
  • Now heat a griddle, preferably use non stick tawa. The tawa should be medium hot.
  • Take a small portion of the dough and spread it on the tawa by gently pressing it with the help of little water. 


  • Apply little ghee on top. When the bottom side is little cooked and firm, Flip the pancake and apply ghee on this side too. Let it cook on medium flame. 
  • Bajra takes little more time than wheat flour to cook and do not hurry else it shall remain uncooked from inside.
  • When golden brown on both sides. Remove from tawa and serve hot.

These pancakes also known as dhebra in Gujarat tastes best with curd or a cup of hot masala chai.
