Corn and Spinach Sandwich


Any snack eatery and that too serving sandwiches has always impelled me to stop and hog on it. Sandwiches are tasty, filling and easy to eat and prepare food. The variety is boundless and connoisseur can easily play with flavours to create variations.

From our late teens we have been visiting Cafe Coffee Day and one sandwich that I personally like to eat there is corn and spinach sandwich. It's so mildly seasoned and the creamy spinach and corn is heavenly.


I have tried to recreate the sandwich in my own style and so sharing it's recipe to you. It has very less ingredients and can be prepared in about 20 minutes. I have used white sauce and cheese spread to give it a cheesy and creamy texture. You can replace the cheese spread with some mozzarella if you want.

Preparing white sauce at home is quite easy. The standard ratio of butter, maida(refined flour) and milk is 1:1:10.  In a pan heat one part of butter and add one part of maida to it. Cook it on low flame till it emits nice aroma. It should take you about a minute or so. Now add ten parts of milk and cook on very low flame till you get correct consistency. Stir continuously to avoid lumps.You can add more milk if you feel so.

Corn and Spinach Sandwich

Makes - 4 Sandwiches

For Filling

1/2 cup White Sauce
2 tbsp Cheese Spread
1/3 cup Boiled corn kernels 
1/2 cup Blanched and chopped spinach leaves
1/2 tbsp Finely chopped garlic
1/4 tsp Black pepper powder
1/4 tsp Oregano
1 tsp Butter
Salt to taste

For Sandwich

8 Bread Slices
Butter to grill sandwich

Method
  • For Filling : Heat a teaspoon of butter in a pan and add chopped garlic to it. Cook it on low flame till its raw flavour is gone. 
  • Now add blanched and chopped spinach leaves and saute it for a minute. 
  • Throw in the boiled corn kernels, oregano, salt and pepper powder. Also add the white sauce and cheese spread. Mix well and cook on low flame for a minute till everything is combined. 
  • Taste for seasoning. You can always increase the amount of veggies as per your choice. 
  • For Sandwich : Heat some butter on a griddle. Place two bread slices on it and apply the above prepared filling on one. Let them toast till golden brown in colour. Place one on top of other and serve hot. You can cut them in desired shape.
Tips: 
  • You can use sandwich griller if you have one to grill the sandwich.
  • Blanching the spinach: Wash the spinach leaves thoroughly and boil them in hot water for 1 -2 minutes. Strain the hot water and rinse them with cold water immediately to stop further cooking. Chop them finely with a knife.
  • If you don't find fresh corn kernels then you can also use tinned ones.
