Mango Coconut Ladoo

It's retreating summer and none of us can get over of mangoes. They are truly the king of fruits.

Eat them just like that or make mango juice. Eat them ripe or raw. They can be gorged anytime.


I made some mango and coconut laddoos today. Few ripe dasheri mangoes were sitting in my fruit basket. So before they go bad, I decided to make this simple recipe and surprise my husband. 

I have used dasheri mangoes, you may use Alphonso. They taste the best. You may choose any mango type but they should be juicy.



Mango Coconut Ladoo

Makes - 12 Ladoos

Ingredients

2cups Ripe Mango pulp
1/2 cup Sugar powder
1cup Milk powder
1/2 cup Dessicated coconut
2 Cardamoms (powdered)
Pistachios to garnish

Method
  • Cook the mango pulp in a non stick pan on low flame. Cooking the pulp will enhance the taste of mango and help you get rid of excess moisture from the pulp.
  • It took me 20minutes to cook the pulp. It had reduced to 1 cup quantity after cooking. Keep stirring it regularly else it shall stick at the bottom of the pan.
  • Once done switch off the flame and let the cooked pulp cool. It should take 15 - 20 minutes.
  • Now to this cooked and cooled pulp add milk powder, cardamom powder, Dessicated coconut and sugar powder. Mix well.
  • Taste for sweetness. You can add more sugar powder if you want.
  • Divide the mixture into equal portions.
  • Take a drop of ghee on your palms and roll the mixture into laddoos.
  • Garnish with pistachios.
Tip: Do not add sugar powder in hot pulp. Else the mixture will release water and become runny.
