Lauki ke Gatte


Many times we are terrified about what snacks to make. Snacks and Healthy, a combination tough to think of. But I keep putting the effort to try some snacks that are healthy and will surely be a choice of all.

Today I'll be talking about a steamed snack prepared with gram flour, wheat flour and the hero of the recipe is Lauki. Lauki/ Dudhi/ Ghiya, many names one vegetable has.

I am delighted to share this recipe with you as it is solely my creation over several attempts and it goes a hit every time I serve this. The most amusing part is no one ever realizes it is made up of wheat flour and lauki.



This is a simple recipe of bringing grated lauki, gram flour, wheat flour and spices together. Steam them and lightly toss them with some curry leaves and chilies. It's ready. This can be a kids tiffin box recipe, evening snack or maybe a side dish for lunch. 

Lauki Ke Gatte

Serves 2

Ingredients

1 1/2 cup grated Lauki
1/2 cup wheat flour
3 tbsp gram flour/besan
1 tsp ginger chili paste
1 tsp red chili powder
1 tsp salt
Pinch of turmeric
2 tsp sugar
1/2 tsp oil
Pinch of ajwain

For tempering
2 tsp oil
1/2 tsp mustard seeds
1/2 tsp sesame seeds (white til)
2 green chilies slit
8 -10 curry leaves
Pinch of Black salt
Pinch of Turmeric and Hing
1/4 tsp Aamchur powder
1/2 tsp Coriander powder

Fresh coriander to garnish

Method

  • Peel a lauki and grate it.
  • Take a steaming plate of medium size. (One in which we make dhokla)
  • Put the grated lauki into the plate and add all the ingredients to it to steam the gatte.
  • Mix it well. No water required. As you mix everything the lauki will give out its water and make the mixture soft. Mix it evenly and spread it in the plate as shown in the picture 1.
  • Preapre a steamer a steam this for atleast 15 minutes or till the knife comes out clean on checking this.
  • Let them cool and cut in squares. (Picture 2)

Tempering

  • Heat oil in a Kadai. 
  • Once oil is hot add mustard seeds and sesame seeds. As they crackle add green chilies and curry leaves. Now add the diced Gatte.
  • Add all other spices and mix well. Cover the kadai with lid and let them simmer.
  • After a minute just give them a light toss and check for salt. 
  • Again cover and cook them on simmer.
  • Garnish with Fresh Coriander and you are ready to serve them.
I make them frequently as it is loaded with Lauki, low on calories and very easy to make.
