Bhutte Ka Kees

Hey friends! Hope all of you are enjoying monsoon. This is a beautiful season which turns nature green and fresh. A season of hot jalebis, Pakoras and of course bhutte. So many vegetable vendors spring up with their makeshift stalls selling coal roasted corn on the cob. The generous amount of lemon and black salt makes it even more delicious. And what if the rain god is generous at that moment..Ah! what an evening. Isn't it?

After relishing the roasted corn I simply buy some raw corncobs from the vendor. After all, there are so many other things that I can make out of them.


Bhutte ka Kees is a street food delicacy from Indore. It is sold hot and fresh at the sarafa bazaar. It is easy to make at home. I make it quite often. You can also use this as a stuffing to make Bhutte ka Paratha. The kees tastes soft, mildly spicy and full of corn. An extra dash of lemon juice will make you fall in love with it.

I have used the desi corn available during monsoon. You may use sweet corn but authentically this is made with seasonal corn and tastes best.

Trick to buy the best corn: Remove the green cover off the cob, gently press a kernel with the nail of your thumb. If the corn is fresh the milky juice will ooze out. Fresh and soft bhuttas makes the best kees.

Bhutte Ka Kees

Serves 2

Ingredients

2 Corn cobs ( With the help of a sharp knife shred out the corn kernels)
2-3 Green Chillies
1 inch Ginger
1 tbsp Oil
Hing (Pinch)
Jeera(Pinch)
1 tbsp milk (You may use fresh malai instead)
Salt
Turmeric powder

Method
  • In a mixer jar take the corn kernels, ginger, and chilies. Grind them to a coarse paste.
  • In a pan heat 1 tbsp oil, add hing and jeera.
  • Now add the ground mixture of corn and start roasting it on low flame. 
  • While roasting it might stick to the pan, but can gently scrape it out with a spatula. 
  • Keep mixing in intervals. Cook this way for 5 -6 minutes. The mixture will dry out a little.
  • Add milk/ malai, salt, and turmeric powder. Gently mix. Cook for another minute. Don't let it dry out too much. If your Kees is still dry you can add a teaspoon of milk.
  • Serve it hot with coriander and lemon. Top it with butter. It tastes even more heavenly.
By adding more spices and little bit of besan to this kees it is ready to be stuffed into a paratha. I shall be sharing its complete recipe soon. Enjoy Bhutte ka Kees with your loved ones.
